What The Heck Is a Patty Pan?

Perhaps you’ve seen these yellow, saucer-shaped veggies at the past few markets and wondered what they are. Well, Farmers Market Patron, please meet the patty pan squash!

Patty pans, sometimes called scallop squash, are a warm-season squash but are less moist than other summer squashes like zucchini. Patty pans grow more firm as they ripen, so they are best harvested and eaten when they’re young and tender.
