Seasonal Recipe: Asparagus Guacamole


Asparagus is one of our favorite spring vegetables and you can find it at the market this month! As a farmers market shopper, we are sure you already have many different (and yummy) ways to prepare asparagus, BUT have you tried asparagus guacamole yet?  If not, give this recipe a try:


  • 1 lb fresh asparagus from the Fort Collins-Loveland Farmers market, trimmed and cut into approximately 1-inch pieces
  • 1/3 C chopped onion
  • 1-2 cloves garlic
  • 2 tbs mayonnaise
  • 1 tbs lemon juice
  • ½ tsp salt
  • ¾ tsp chili powder
  • 6 drops hot pepper sauce – preferably from one of our amazing vendors!



  1. Bring asparagus to boil in about ½ inch of boiling water, then reduce heat and cook until tender (5-mins)
  2. Drain asparagus well and blend in food processor with onion and garlic
  3. In a separate bowl, combine remaining ingredients. Add asparagus mixed and combine, chill.
  4. Serve with raw veggies, pita, or tortilla chips
